After all the heavy food of the Holidays I am craving veggies. I received The Pioneer Women Cooks: The New Frontier cookbook for Christmas from my parents. As soon as I saw the taco-stuffed mini peppers I knew I had to make it.
They turned out even better than I imagined. The only change I made was I used bell peppers instead of mini peppers. I couldn’t find mini peppers at my local grocery store so I figured this would be a good meal size. I had six taco peppers from this recipe. The star of the show is the avocado crema. It was amazing. It was so simple to make. It had avocado, lime juice, lime zest, sour cream, and a splash of milk. I am not exaggerating when I say that it is better than guacamole could ever hope to be. I would have had more for my pepper if I hadn’t have ate it all on my tortilla chips, lol. I am making that every time I have tacos.
This recipe was such a hit. There are so many more tasty recipes I am ready to try. I highly recommend this cookbook. The recipes are simple and the directions are a breeze to follow. She photographs almost every step. I really love that. I hope you cook up something tasty tonight.
